Recipe: Baked Parmesan Zucchini Crisps

As I have stated before I am looking for ways to be a little more healthy. So I found this recipe on pinterest for parmesan zucchini crisps and oh my goodness it is delicious!

It really is super easy!


You just take however many zucchinis that you want and toss them in just a little bit of olive oil. Just enough to coat them. I used just one and that is enough for me this afternoon to snack on.


You then lightly coat them in the bread crumbs, parmesan, salt, and pepper mixture. It won’t be a thick coating and then you take what you have leftover and sprinkle it over the zucchini.


Then you bake them for roughly 22-27 minutes! A couple of them got a little burnt, no biggie.

Super tasty! Such a great afternoon snack!
