Y- Yogurt

I have found a new love for yogurt! Noosa is a local brand that is supremely delicious. I eat it plain, I put it in oatmeal. I eat it with fruit. So stinking yummy. The health benefits are also undeniable as well. It is so good for you digestive system. 

It helps keep everything going regularly. It helps keep everything moving smoothly and regularly and allows the system to be healthy. So awesome! 

And so delicious! I have tried the honey flavor and I have the peach and blueberry flavors in my fridge as well! I can’t wait to eat those too! Yum yum yum!

X- X amount of hours

Days seem to not have enough hours in them lately. Or I am not getting enough sleep. We all need X amount of hours of sleep. Each one of us is different. I most definitely need more sleep than TJ does. I tend to be exhausted more often than TJ. We all need to get the sleep that our bodies need. There is no way we can function properly without it. So, part of living a whole life is getting the amount of sleep necessary to live that life! Don’t try and cram everything into one day. Spread things out and do not stress out. Get some sleep and that will help you tackle your next day so much better!

Also, prioritize…. Don’t try to accomplish everything every day. You can’t. Decide what really must get done today and do that! Save on the stress! It will help you feel better and sleep better. Live life and live it wholly.

W- Whole Foods

I have a new addiction! Whole Foods is quite possibly the best store ever! There is one right down the street from our new house and TJ and I went in and have decided it is almost as awesome Sprouts. It can be a little pricey but sometimes they have exactly what I am looking for!

I got TJ and smoker/grill the other day and last night we got off kind of early and decided to do cheeseburgers on the grill. We thought we would stop by Whole Foods to get some ground beef and came across the awesome pre-made patties made of three different cuts of beef. It was a must little splurge. They were extremely delicious! They have also had amazing bread and strawberries and eggs.

So far there has not been anything from there that is not extremely delicious! We even tried Quinoa for the first time that we bought from there. Needless to say, I am definitely a fan!

If you have not tried whole foods, you must got and give it a shot!

V- Very delicious and Very healthy!

I love dessert. I feel like we have had this conversation. I love sweets too. Yum yum! So when I stumbled upon this quinoa apple bite recipe, I was sold. It is really pretty healthy for you and it is super tasty! Yum!

It is dairy free!


1 Cup cooked quinoa
1 Cup quick oats
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
3 tablespoons brown sugar
1 tablespoon granulated sugar
1 Tablespoon maple syrup
1 cup chopped apples
2 eggs, lightly beaten

You mix all the ingredients together until just combined. Make sure you add them in order so that the mix well!


The you place about a tablespoon of the mixture or so in a greased mini muffin tin and you bake them for about 15-20 minutes.


Easy and delicious!

U- Understanding the Need to Get Away

Life can be so stinking stressful sometimes. My husband and I both work in retail and we have a huge sale coming up so the store is getting a little more stressful. I am changing departments and that requires new training and understanding of different products. Then there are so many other things pulling us in different directions too that sometimes stress just becomes overwhelming. I and I think most people tend to recuperate best when they get away. I love going away for a whole week or weekend or a couple weeks if I’m lucky. But we could even just go away for a couple of hours.

Today was such a nice day in Denver, there was no way I staying at home worrying or stressing about the amount of stuff that needed done. We went to Red Rocks Amphitheater! There is a park there with a mile and a half long trail. Perfect for my little man and I to spend the day! It got us away from home and away from the pullings of life for a couple of hours. We threw the top down on the jeep and we were on our way. It was the best way to recuperate and keep me going through this next week. So awesome! Faelyn was particularly fond of it as well. I pulled out his harness and he went crazy knowing that we were going out and going to be out for a while. We only pull out his harness when we are going to take him hiking or climbing with us. He loves it!

Those are just a couple of my favorite shots from today! The formations were beautiful! The weather was beautiful and only 15 minutes from my house! Love it!

T- Time for Warm Weather?

It is finally warm here in the lovely Denver, Co! Yay!!! April has brought more snow than we got most of the season. How crazy is that?! We have had two or three snow storms over the last couple of weeks. Here let me show you….

How crazy is that?! This is April! Virginia and Pennsylvania are getting much warmer weather, why can’t we!?
Today we have finally made it up to 62 degrees! Yay! There is a 30% chance of snow on Wednesday but I am really hoping it doesn’t. I am just done with the snow. I know I know, we need the moisture. We have restrictions already on our water usage and we need to get our reservoirs filled up but dude, can we please be done?!

So, anyway, I definitely plan on getting out in the sun today. The house needs a little tidying first but I have every intention of being outside and enjoying the weather!

S- Strawberry Jelly

Oh my goodness, thank goodness it is Friday right guys? I am so far behind on the challenge, I am sorry. I legitimately have not been home this week except to sleep. If I wasn’t at work, I was celebrating someone’s birthday or with some friends or doing this or that. I have not had a day to stop and just recuperate and refresh. Thankfully, today is that day! So you might see a bombardment of posts to catch up for the challenge today. You have been warned!

Almost two weeks ago I made some strawberry jelly. So stinking yummy! I had never made homemade jelly so this was definitely an experiment. Then earlier this week I made strawberry jelly again but with a twist from the first recipe. I am still figuring out this whole process, but this recipe is actually made in the crockpot. You can find the original recipe here. So easy and so yummy!

So the first time, I did:

2 pounds of strawberries
3 cups of sugar (4 seemed a little much to me)
1/4 cup of lemon juice
some pectin

I cooked it for about four hours in the crockpot. I stirred it a couple of times. But when I was done, I did not quite have the consistency I wanted. So, I threw it in my ninja. hehehe. Blended it a little and then we were good. It was exactly what I was hoping for!


At the beginning….

It made a really good amount. I ended up separating it up and freezing part of it so that it will last longer. I cannot eat that much jelly that quickly otherwise lol.

This week, I switched up the recipe a little. I don’t have pictures because they are essentially the same.
I was going to make peach strawberry jelly but my peaches ended up being no that great. So, instead I did this:

2 pounds of strawberries
3 cups of sugar
lemon juice (I just kind of squirted it in there, I did not measure this time)
half an apple all chopped up.

This batch was honestly better than the first. The apples added this little nuance to it that just made it fantastic! It is also a little sweeter. I did not really get the whole pectin package the first time and so this time, knowing that apples are natural sources of pectin, I went for that instead.

Oh my goodness, so stinking delicious! As more fruits come into season, I will definitely be experimenting more with making jelly. I am going to definitely need to get some more containers though. hehehe.

R- Reading Update

Ok, so this whole 52 books in 52 weeks thing may have so far gotten the best of me. Oh well. We live and we learn right? I am still trucking along with them though. I am trying to get at least the majority of them read before the year is up! But it is looking quite dismal I must say….

So far I have read 10 books out of the 52…

Q- Quit Making Excuses

We have all heard or made them…

“I would work out, if I did not work so late.”

“I would do laundry if I had more time.”

“If only I had more time.”

“If only I had more money.”

If this and if that. Living a fuller life means stop making excuses. When I started this challenge, I said I was going to try and share ways to live a fuller and healthier life. I have shared some posts about healthier items, but not so much about the fuller. There is so much more to life than sitting around making excuses.

You don’t want to live life and get to the end wishing you had done something differently. Do it now! Find a way and do it now!
There is a guy at work who is planning big trips and he doesn’t want to settle down, he just wants to go out and enjoy life. Go for it! If you are already married, take your significant other with you! Do stuff that you have always wanted to do! Go on hikes, go on dates, just get out and enjoy life!

No more excuses! You are the only one holding you back! No one else.

P- Planting!

I know this is ridiculous to be talking about when I have several inches of snow still on the ground here in Denver, but I am ready for the warm weather and I am ready to be planting. Several weeks ago I got super excited and bought some seed packets, maybe a little prematurely. But I have the day off today, and I am going to be planting the herbs in these little jars so maybe I can get that done today, who knows? I love the idea of having fresh herbs. I also bought a packet of green beans to plant. Those will have to wait though. I am excited for fresh vegetables! Maybe I will even plant some strawberries! I love fresh strawberries!

Are you planning on planting anything? If so, what are you going to or have already planted this year? I keep forgetting most of the country is warming up. Lol!
