Happy November!

It’s November! Yay! The air is getting cooler, the drinks are getting warmer, and ski season is getting closer! 🙂

Hope you guys had a great Halloween last night! Mine was definitely enjoyable!

But on to November! This month means NaBloPoMo! I told you about it a couple of days ago. Hope you guys are ready to blog along with me this month! I am really looking forward to reading your posts as well!

My posts of choice are going to be lists. Lists lists lists! I usually have several going at any given time just to get me through my week and help me remember things. I swear I am going to lose my ability to remember things sooner than hoped lol! I figure that the only proper way to start off this lovely month is by telling you the top 3 things I love about fall!

3 Things I Love About Fall:

1~ The colors of the leaves. The reds, the oranges, the yellows. What is there not to love?! When I was in college, the hill right next to campus looked like it was on fire every fall with the wide array of colors that were displayed across it!

2~ Sweaters! I love sweaters! I wish I had more! I currently have lots of hoodies. But the few sweaters I do have, I absolutely love! I love the look of sweaters, especially sweaters and leggings!

3~ Crisp nights! There is nothing quite like sitting around a fire with some friends on a cool night. Hanging out and just talking. Plus it means that my room is cooler in the evening so it is easier for me to sleep without nightmares! Love it!

Chocolate Sugar Cookies

The weather is getting cooler and the colors are changing and more get togethers seem to be happening. You know what this means?! Baking season! TJ has already made his first loaf of bread! What?! Is it time already?! I love baking season! I know I know some people bake all the time, but honestly I just do not want to turn the oven on in the summer. It makes the house way too hot! You know what I’m saying?! So, that being sad I have had my first attempt at sugar cookies at altitude. They weren’t terrible but I definitely learned my lesson lol. These ones were different than the ones I grew up with. They were chocolate and oh so delicious!

I got the recipe from Julie over at Table for Two. Check out her blog, she has some super delicious recipes on there!

Ingredients:

  • ⅓ cup granulated sugar
  • 1½ cups plus 2 tbsp. all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • ½ tsp. baking soda
  • ¼ tsp. baking powder
  • 14 tbsp. unsalted butter
  • 1¾ cups packed dark brown sugar
  • 1 tbsp. vanilla extract
  • ½ tsp. salt
  • 1 large egg plus 1 large yolk

Preheat oven to 350 degrees Fahrenheit. Line two baking sheets with parchment paper or silicone baking sheets. Place granulated sugar in a shallow dish and set aside. Combine flour, cocoa, baking soda, and baking powder in a bowl. Whisk to combine.

Microwave 10 tbsp. butter, covered, in a large bowl until melted, about 1 minute. Remove from microwave and stir in remaining 4 tbsp. of butter until melted. Allow butter to cool to 90-95 degrees, about 5 minutes.

In the bowl of a stand mixer with the paddle attachment, mix brown sugar, vanilla, salt, and melted butter together until no lumps remain. Add in the egg and yolk and mix until smooth. Gently add in the flour mixture and mix until just combined.

Working with small balls of dough at a time, roll balls in granulated sugar and divide between baking sheets. Using a bottom of a drinking glass, flatten cookies to 2 inches in diameter. Sprinkle each sheet of cookies with 1½ tsp. remaining granulated sugar.

Bake 1 sheet at a time until cookies are slightly puffy and edges have begun to set, about 15 minutes, rotating sheet halfway through baking.

See, here they look super fluffy and delicious! They did not stay that way! Add some extra flour my friends when cooking at altitude!

Let cookies cool on sheets for 5 minutes, then transfer to wire rack. Let cookies cool completely before serving.

They got flat and kind of crunchy! When they turn out like this, serve with ice cream or lots of milk!

Time to Stop Avoiding

Alrighty, well I have really been avoiding the blog lately because I keep saying, Oh I need to post about Hawaii. That task just seems so daunting right now lol. We took so many pictures and did so many things that it seems like such a monster to tackle. I am not sure how I feel about tackling said monster at this point. So, instead of avoiding the blog I am just going to continue blogging. Fun things happen everyday and I miss talking with you guys! Hawaii will come, I do promise that. I am just not quite sure at what time. First thing to do is find the SD card with all the pictures. I think I might have misplaced it. Oops!

We are now into the month of October! Yay! I am so happy and ready for all of the fall weather and fashions. Not gonna lie, the more layers the better! Love it! I have made my first pumpkin chocolate chip bread of the season. So yummy! I got the recipe here. You should definitely give it a shot! It was a hit at the little friend gathering I went to as well, so it wasn’t just me munching away at this deliciousness! Are you guys excited about the changing weather as well? Or is that just a me thing?

Also, we have snowcapped mountains now! I love the Colorado mountains all year long, but they are especially beautiful when they are snowcapped. When it is sunrise, the sun reflects off of them often in pink and purple colors that just cannot be beat. Seeing the snow up there means that some of the ski mountains will be starting their season soon. That is music to my ears! We have started getting our ski gear in at work and I could not be happier. It is giving me the itch to get out there and “shred some gnar”.

Cooler weather means Faelyn and I get out a little more. It is so hard to take a husky outside when it is blazing hot. But we are now going hiking a couple times a week. That keeps him from getting destructive as is the tendency of bored huskies. I love seeing all the colors and getting a good cardio session in at the same time. You just cannot go wrong with a good hike!
