Warm Weather Dreaming

Anybody ready for some warm weather? Some sunshine and vitamin D? I will admit, I raised my hand on both of those!

Now, don’t get me wrong! I am a huge ski bum! I would love to next year be able to work less and chase the powder more! You know what I’m saying?! I love love love skiing!

But, I am also a California girl who loves her warm weather and sunshine. It got to be 45 degrees today and I got excited! How sad is that?! I was happy that it warmed up this week! That was considered warm! Haha!

Anyway, I can’t help but look at these pictures on my pinterest page and dream of being in these places!

Who wants to go swimming in these crystal clear waters with me?! That sounds great!

Am I the only one dreaming of warm weather?

Party Salad!

The other night, our friend TJ (not my TJ) had a Celebration of the Table party! He had made this beautiful table and wanted to celebrate it by having a feast! We never turn down an opportunity for delicious home cooked food. All of our friends make delicious food and so we were pretty excited. I had every intention of taking my camera to the party but I completely spaced. It was super fun with about 25 people there. We had ribs, macaroni and cheese, cornbread, grilled peaches and I brought a Black Bean and Corn Salad. I figured some veggies would be a nice addition to help balance things out.

Black Bean Salad

Ingredients:

1 (15 ounce) can of black beans, thoroughly rinsed, and drained (or 1 1/2 cup of freshly cooked black beans)
1 1/2 cups frozen corn, defrosted (or fresh corn, parboiled, drained and cooled)

1/2 cup chopped green onions or shallots

2 fresh jalapeno peppers, seeded and minced, or 1 whole pickled jalapeno pepper, minced (not seeded)

3 fresh plum tomatoes, seeded and chopped

1 avocado, peeled, seeded, and cut into chunks

1/2 cup fresh chopped cilantro

1/4 cup fresh chopped basil

2 Tbsp lime juice (about the amount of juice from one lime)

1 Tbsp olive oil

1/2 to 1 teaspoon of sugar (to taste)

Salt and pepper to taste

You mix everything together except for the sugar and the salt and pepper.

After you have it all mixed together, you add the sugar and salt and pepper to taste. 

I ended up tripling the recipe because of how big the party was and it turned out perfectly!

Staying Hydrated

One thing that I have come to realize over the last couple of years is how much I need to stay hydrated. Especially since moving to sunny, dry Colorado I realize I need even more water than I thought. But honestly, water can just get so boring and monotonous after a while. I am such a sucker for soda and so that makes it hard for me as well to drink water a little more consistently. However, the wonderful world of Pinterest has shown me some more fun and tasteful ways of staying hydrated.

I have seen this picture posted all over the place but this is the site where I ended up pinning it from. 

I have done the blueberries and oranges. I love that one! I am trying the raspberries and lemons today. Hopefully it is as tasty as it looks! Tomorrow I have not decided between the strawberries and the limes. They both sound yummy!

May!!!

Alright guys, April was not a great blogging month. The song challenge was not my favorite, I’ll admit. Which is surprising because honestly I thought it would be one of my total favorites. But I just wanted to post about what was going on in my life and what I had been doing fun lately. But anyway, May is going to be better. The challenge this month is 30 Days to a Better Wife ! I am super excited about this one! I love focusing on my marriage. I love focusing on loving TJ! It is one of my favorite things to do! This challenge is also great because it is not a day by day thing, it is a week by week thing. You take a few things to focus on each week and then you work towards those. It is quite lovely. I am excited to really work on all of this

Week One: Be Interested in What He Likes To Do

~ Watch nerdy shows or paddle videos with him. The original post said watch sports with him. TJ isn’t really in to sports. White watering kayaking videos on YouTube is his version of sports. I absolutely love him for it but I had to adjust my focus for this point.

~ Ask him about his day/work. Thank goodness for him working full-time at a different job than I do this summer. I can actually ask him about his day without already knowing and being there for all of it.

~ Give him time to unwind. This one is hard for me. He works really hard at his other job. Mine is not nearly as physically exhausting so on my days off or if I am off earlier in the day I want to go outside and play. I want to ride my bike or go for a run or go for a hike. He on the other hand has been outside all day with his other job and just wants to relax. So, I need to work on not pushing him to get up and go when he has already been doing that all day.

Those are the things to focus on this week. I hope that through this month he sees just how much I really love him!
